Cook Like A Jamaican’s Ackee And Saltfish With A Touch Of Meat

How To Make Easy Jamaican Ackee and Saltfish

Ingredients:

1/2 lb salted cod
2 cans of ackee
8 strips of bacon, chopped
1 medium onion, chopped
3 tablespoons cooking oil
1 teaspoon black pepper
Salt to taste

Soak the cod overnight, then flake. Alternatively, boil the cod three times, flake and set it aside. Drain the ackee. Fry the bacon. Saute chopped onion and tomato for five minutes, then add fish, bacon and pepper. Pour in the ackee last, then simmer on low heat for 10 minutes.

A Traditional Ackee and Saltfish recipe

Ingredients:

1/2 pound salted codfish
1 can ackee, drained
1/2 cup vegetable oil
4 cloves garlic, chopped
1 sprig thyme
2 onions, sliced
4 scallions, chopped
1 cup bell peppers, sliced
1 teaspoon black pepper
1 teaspoon paprika

Soak the fish in hot water for 1 hour. Replace the hot water and soak the fish for 1 more hour. Saute the garlic, then add thyme, then the vegetables. Stir.

Add the fish and simmer for 5 minutes, then pour in ackee and simmer for 2 more minutes. Finally, stir in black pepper.

Serve with a paprika varnish.

Jamaica Inn Extra Spicy Ackee and Saltfish

Ingredients:

1/2 pound saltfish
Can of ackee
1 medium onion, chopped
1 small sweet pepper, julienned
1 medium tomato, chopped
2 cloves of garlic, minced
1 tablespoon scotch bonnet pepper, chopped
2 stalks scallion, chopped
1-2 tablespoons olive oil
Salt and pepper to taste

Soak the saltfish for one hour, then boil until it’s tender. In a separate pan, sauté all of your vegetables for six minutes. Debone and flake the saltfish before you add it to the pan. Stir in black pepper and ackee. Toss it all, then cover and simmer over very low heat for 2 minutes. Enjoy!
